I feel lucky, he's the best! Being Eddy's mom is everything! Everyone told me I wouldn't understand until I had a kid and they were totally right. My heart has expanded beyond my imagination.
BEAUTIFUL DAYS
My favorite days lately are spent having mellow mornings at home, making coffee and eating breakfast with Eddy. If our shop is open we will go and hang out with Chris, get a little work done before nap time. Eddy and I run a lot of errands together. Having him along for the ride makes boring stuff fun! The post office, grocery store, the dump, all make him laugh - he gets a kick out of everything. Afternoons are spent at home, playing with toys or we take our dog Goose for a walk. We have an everyday routine which can be exhausting or repetitive but I'm rewarded with heart melting laughs or smiles. I'm super fortunate that having our own business allows me to be with Eddy everyday.
DREAM UNIFORMS
I'm always on the lookout for well fitting overalls, do they exist? Someone help please!
Chris says he's already living his dream, uniform included [ 😂]
WELLNESS + MOTHERHOOD
I've been taking prenatal vitamins, Pregna Vite by Genestra, for the past year or more. My chiropractor recommended this brand, it's a good, clean prenatal. Plus they won't upset a sensitive stomach.
MORNING TONIC
I've been drinking "Mother's Milk" by Traditional Medicinals - it tastes great, helps with milk production for the little guy, and for an added treat I mix a little honey, tocos and nut milk
FAVORITE SPOTS OUT EAST
I love taking our dog Goose to the dog park in springs or beaches, LongHouse Reserve is the most beautiful garden to walk and surfing in Montauk is the best. And of course I still enjoy hanging out at our shop!
BEST COFFEE IN THE HAMPTONS
I'm pretty addicted to our coffee (at S&S Corner shop)- it's from Abraço cafe in the city. Jamie McCormick is a wizard and the blend he makes for us is pretty darn special. It's like the best regular tasting cup of coffee, very creamy and mellow.
LINDSAY'S BANANA BREAD RECIPE ❤️
I try to live a somewhat healthy life style but I also have a major sweet tooth. One of my favorite things to bake is a very simple banana bread.
1 3/4 cups all-purpose flour
1 1/2 teaspoon baking soda
3/4 teaspoon kosher salt
3 large eggs
1 1/2 cups sugar
1 cup mashed ripe bananas (about 2 large)
3/4 cup vegetable oil or olive oil
Preheat oven to 350°. Coat a loaf pan with nonstick spray (or olive oil). Whisk flour, baking soda, and salt in a medium bowl. Whisk eggs, sugar, bananas, and oil in a large bowl until smooth. Add dry ingredients to banana mixture and stir just until combined. Scrape batter into prepared pan. Bake until a knife inserted into the center comes out clean, about 60 minutes.
