Ice cream is a pleasure, a delight. We fell down a rabbit hole reading about the milk fat globule membrane, a naturally occurring structure in milk and cream that researchers are studying for its relationship to cognitive, immune, gut, and metabolic health. Some long-running nutrition studies have found surprising associations between moderate ice cream consumption and metabolic health outcomes, though researchers are still figuring out why. Food can be more nuanced than good/bad.

 

Ingredients matter. Most commercial ice creams strip away these beneficial fats and substitute them with cheap vegetable oils, artificial sweeteners, and stabilizers. So find a brand with good ingredients (like this one), OR make your own.

Start with a vanilla ice cream base, or for the industrious, make your own. Let the ice cream soften for 10 or so minutes so that your added ingredients are easily combined. No exact measurements needed, listen to your heart.
