INGREDIENTS:
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 cup all-purpose flour or bob's red mill gluten-free flour
1 teaspoon salt
3 cups old fashioned oatmeal
1 cup raw pistachios
1 cup raw walnuts
Optional: Dark chocolate chips. The pistachios already have melatonin, but for an extra bit with your bedtime snack add dried cherries diced small and skip the chocolate.
HOW TO:
Heat oven to 350°F
In a large bowl, grate the zest of 2 oranges. Pour in the brown sugar, and use your hands to massage the zest into the sugars to bring out the orange flavor. Melt the butter and in a large bowl beat melted butter, zest, eggs, vanilla and sugar together with an electric mixer.
In a small bowl, combine the flour and salt, and mix well, then add into the mix. Cut the nuts into small pieces and add the nuts and oats in, mix well.
Drop dough by rounded tablespoonfuls onto cookie sheets with parchment paper.
Bake 18 minutes or until light golden brown.
Let cool completely on cookie sheets and enjoy :)

Just pulled out a batch of 28 delicious Orange Zest Oatmeal Nut Cookies. Wow, so pretty, healthy & delicious !! Glad no one was watching while I was massaging the orange zest with the brown sugar . Had my nose inside the bowl because the aroma from the orange zest when I was massaging the two together was heavenly. The dough is moist so I placed in fridge for 10 minutes to firm a little to make easier to roll and place on cookie sheet . Made batch with and without bittersweet chocolate chips and both are yummy . Thanks so much for sharing this recipe while you are on maternity leave ..Will definitely add this cookie recipe to one of my favorites and be making again over & over ..
